- 2 tbsp olive oil
- 1 cup mushrooms
- 2 cloves garlic
- 1/2 lb kale
- 1/2 tsp salt
- ground pepper
- 1/2 cup tomato sauce
- 2 tbsp capers
- 1/4 cup black olives
- 1 1/2 lbs cod
- balsamic vinegar
Directions
In a large pan, heat the oil on medium-high. Add the mushrooms and cook, stirring for about 5 to 7 minutes, until they start to brown. Stir in the garlic and cook until fragrant, about 30 seconds. Add the kale, salt and pepper and cook for 4 minutes. Add the tomato sauce, capers, olives and cod and cook covered until fish is done, about 5 to 7 minutes. To serve, brush the fish with a little balsamic glaze.
